Do Disneyland put these on every day? Or is it only select days?

You'll need to check the schedules!

Last year when I went WoC was still down (but I think when it's running it's usually every night, but again you need to check the schedule). Fantasmic was only running on weekends and high crowd days. Another thing to add is that fireworks also don't happen nightly at Disneyland, so check the schedule and try to see it early in a trip (as they sometimes get cancelled due to high winds).

It's not going to be out for a few months yet - Disneyland releases their park hours and schedules very late (compared to WDW)!
