Added an edit as another thing we have enjoyed the past couple of trips is catching the Sunrail commuter train service, which is double decker so a good view from the upper deck. We have been from Poinciana (free car park) to Winter Haven and then visited the Morse museum which has one of the best collection of Tiffany glass, lamps etc and is well worth a visit in its own right.
The Morse Museum is in Winter Park. It gets very confusing with Winter Park, Garden and Haven all near Orlando! Park is the only one on the Sunrail line

We did Lake Apopka wildlife drive. Its about 45 mins away from Disney (might be less). Its a bumpy one way track around marsh and swamp land. Loads of wildlife right at the side of your car.

Our kids loved it. Saw lots of Alligators, turtles, armadillos, birds .

Its free but if I remember correctly its only open certain days.
No food facilities (we took a picnic and ate as we were driving round) The toilet is one of those festival type loos and has seen better days. My husband went to use it but was worried what might be lurking or creeping around in the corners so came straight back out.

Apart from this well worth a few hours away from the parks etc.

Not sure if I can put a recommendation, but Amazing Animals in Orlando is amazing to do - you can book a private tour and they're lovely (If you watch TimTracker on Youtube you'll know who i mean)

Tubing at Kelly Park, Apopka, on a natural springs river. There are lifeguards, and there is a swimming area too. You can rent tubes from places just outside the park entrance for not much money.
