We’re doing this in August.

I wasn’t tied to particular dates, so booked a good deal a few weeks ago with Aer Lingus out to NYC, inbound from Orlando, less than £500 pp.

Searching for ‘multi-city’ flights with the same carrier seems to get decent prices for a return trip, or with the low-cost operators who sell single legs for a good price.

I then booked Southwest flights (online) Newark to Orlando for $95 pp when the flights were released last week to tie in with my Disney package that I booked months ago for the free dining offer.

I got some good advice on here about booking the Disney stay - booked direct with Disney for 21 nights, with the plan to amend the booking (at a cost of £50) to a 10 night stay within that window.

Can’t help on NY hotels as we are staying with family.

Did this last year, booked a multi centre fly drive through BA for a great price. EDI to JFK with AA, then JFK to MCO with AA. Flight to MCO was about 3pm so good timings. Flew home MCO/LGW/EDI with BA. Couldn’t fault it at all, car hire with Avis and free 2nd driver.
Only thing for us was we stayed 6 nights in NY and for my kids(16 and 23) this was probably a day or two too long. All depends on what you like to do, we had been to NY a few times but was first visit for my 16year old son. We had an amazing time.
