Mobile Left over pork

Having a Sunday dinner tomorrow

The pork is massive and there will be loads left over.

What to do with the left overs

I was planning on a pork and stuffing sandwiches but it seems as though I forgot the extra stuffing when I’ve just been to the shop.

Carve, freeze leftovers, use for another dinner, or with chips... ok to freeze again once cooked...

Home made fried rice, just fry off some spring onion (or any type) garlic, small carrot pieces, in a little oil, add your pork, throw in some cooked rice (I prefer brown) I add pineapple, baby corn, peas, anything really, then finish with two eggs, mixed with a tablespoon of sesame oil. Serve with soy sauce. You can use any left over meat for this, or none! Its really delicious.

I make chicken and black bean enchilladas with leftover meat from the roast and it should work ok with pork.

Meat of choice - shredded if possible, tin of drained black beans, red onion fried off with some chipotle paste or chilli flakes add some passata or tinned tomatoes then wrap in tortillas cover with more passata and grated cheese and bake for 20 - 30 mins until bubbly and delish!

I'm not sure about reheating cooked pork, it's a bit risky. Can you make it smaller while raw and freeze raw pork otherwise have it cold with jackets or in sandwiches.

I was thinking the same, we often have pork chops or a loin joint with chips, egg & beans or sometimes I make a curry sauce & put cut up leftover meat in it

Never heard that before. No reason why you cant reheat pork as far as I'm aware
