need inspiring for side dishes!

am trying to do different dinners (after a few complaints ) but seem to get stuck as to what to serve as a side dish ! I do the obvious such as roast (mini too) , mash , pasta and chips . I do roasted veg too but not many of mine eat that . what else do you serve ? do you have any good potato or veg recipes? thanks.

I am not big on cooking but here are some that we enjoy. Cauliflower cheese. Gratin potatoes. Croquette potatoes.

Also, I have recently discovered frozen stir fry veg in Tesco, which are nice but better again with a bit of soy sauce sprinkled over. We had it yesterday with cold chicken. Tasty.

Dauphinoise potatoes, cauliflower cheese, swede and carrot mash (great on a cottage pie instead of potato), cous cous, potato, squash and goats cheese gratin, garlic roasted brocolli, crispy oven baked asparagus fries, roasted mushrooms, cabbage and bacon, sesame snow peas...

Potato salad made with new potatos, spring onion and mayo and a bit if salt. The longer you chill it the better it tastes, you can add a spoon of curry powder to spice it up a bit. I also roast new potatoes with garlic and rosemary, salt and olive oil, par boil them slice long ways in half, then roll them in the ingredients and roast with the round bit up! Jacket potatos are good Or potato skins are nice, I buy potato skins already done from sainsburys as I made them and nobody liked them apart from dh and myself! I also buy supermarket savoury rice frozen and add mushrooms and peppers and remove some peas (why so many peas!) also garlic for added flavour if you like. Give it all a fry in the pan! Happy cooking x

Bubble and Squeak is the favourite "side" here - leftover mash, leftover cabbage, fry - getting lots of brown crispy bits.

Followed by potato cakes - leftover mash, flour, egg - mixed, form into balls, flatten, fry

followed by cheesy croquettes - leftover mash - see a pattern!, loads of cheese, bit of flour, egg - (sometimes some cooked bacon too!) roll in breadcrumbs, fry.

sweetcorn fritters - sweetcorn, egg, flour, spring onion, dollop into hot oil.

After the frying phase on all you can freeze, and then reheat in the oven.

My favourite at the moment is cous cous with a little sweet chilli sauce and chopped vine tomatoes. Goes really well with Mediterranean pork and veg.

Another vote for sweet potato!
A little dab of sour cream. Mmm!

Fresh green beans, butter, thin sliced almonds and a squeeze of lemon.
I either fry them or grill them in the bbq in foil.

Creamy canellini beans with garlic and basil. Just mash them up and add some garlic seasoning and pepper.
Depending on my mood...I sometimes put it in a baking dish and top it with some breadcrumbs and parm cheese and broil it til it gets a light golden brown.

Chilli sweet potato fries: cut the sweet potato into fry shapes. Brush with olive oil and sprinkle with chilli flakes before roasting.
