I would buy them before you go. You can still choose whether to buy via a UK or USA site, and therefore take advantage of the $ but I prefer to have my tickets in my hand before travelling.

It's also worth knowing that there are different deals offered to UK customers than to US customers. For example at Disney, UK guests can buy 7/14/21 day tickets which include all water parks and hopping. American guests can only buy the Magic Your Way tickets which are for a set number of days to a park, and hopping and water parks are extra. We can also buy these tickets, either by using a US website (or some UK websites have them), or getting them in the USA. But, once you get to the States you cannot buy the 7/14/21 day tickets over there.

Universal are similiar in that they have deals available to the UK customers that will not be available once you get to the States, likewise there are deals available to the Americans that they don't advertise to the UK.
Universal 7 day ticket $85 is one such deal

The prices are pretty good over here and like the previous reply there are tickets over here that you can't buy over there, not to sure if you can buy the orlando flexi ticket over there either. I like the tickets in my hand

I prefer to buy them here for a few reasons. You get more time to look around and decide which tickets you prefer. You get deals here you dont get in the US. If your tickets are bought before you go, you dont have to try budgeting when your over there for tickets.

Buy before you go!

If you want to pay in dollars then use a ticket broker like ticketmania.

Or even undercovertourist (MYW or uk ultimates) allows you to pay in dollars but have an office in Edinburgh I think... get discount via mousesavers.

Buy before you go - but buy from an American site

(assuming the US tickets suit your needs better)
