The difference between our last holiday and our next?

Hi. We were in Florida this year in Feb. Had a great time so of course we’re already planning our next one. Won’t be for a few years though but like to plan early.

So this year was in Feb and we stayed at SS and flew with BA from Edinburgh.

Next time I think we will go in May from Manchester with Virgin and stay at AKL.

What differences can we expect with time of year, airline and accommodation?

Bit how long is a piece of string question.
Flying direct in economy , (presume EDI was indirect) not much difference in service between BA and Virgin , personally I prefer BA but that's very subjective, plenty of people love Virgin. Both use older planes but fairly recently cosmetically refitted , both have decent inflight service .
May will be hotter , you may see love bugs and it'll be wetter (it's the tropics after all),crowds in the parks will be higher, be aware Whitsun weekend is also a US holiday weekend and will impact that weekend in the parks.
Every hotel is different , AKLs pluses are of course the animals , things I didn't like about AKL was the location as it's further from the parks apart from AKL, the long and very dark corridors felt very claustrophobic, things that bothered me but may not bother you on the other hand the food options at AKL are excellent.
