its a bit of effort, but SO WORTH IT! previous attempts didnt come out nearly as good as this (tried boiling the skins or using a dehydrator - both had ok results, but compared to sticking them in between a couple of heavy duty sheet pans in a low oven for a few hours, i'll be making the extra effort from now on!
i usually buy boneless/skinless thighs for most things, but i'll not bother in future! ill just get better at deboning them myself... |

well that was a resounding success!
because i used pre-made shio koji (with added sugar) it was a little sweet, which was kinda strange, but it worked! when i do my own shio koji rice, there wont be any sugar but for a first attempt, nailed it! ![]() ![]() ![]() ![]() need to figure out a properly lit shot of the next one, fried chicken burgers don't look that great in photos ![]() didnt end up having churros, gf nipped to the tesco down the road for a bottle of wine, and came back with some krispy kreme doughnuts, so i fried them off and served with some icecream... ![]() so far, KK and dunkin are best, but ++expensive. morrisons is decent and costs a quarter of the rivals. asda are meh - not nearly enough glaze on the donuts for them to caremelise and turn crunchy... |

quick dinner yesterday, B has been ill, so we've mostly been just chilling in bed or on the sofa with him. so a trip to project pies for one of dan's large steak and stilton pies.
was going to do chips and gravy with it, but i pivoted, and went with as easy as i can. a packet of idahoan loaded skins instant mash that we brought back from florida last year, and a pouch of some loyd grossman posh cheese sauce. but as chef damaris phillips says, i gussied them up! i had a wedge of colston bassett stilton in the fridge, so i put a load of it in both the sauce and the mash, along with a load of parmigiano reggiano, and fresh chopped parsley and chives from the garden. the instant mash also had a small tub of leftover balsemic caramelised onions that were lurking in the back of the fridge and a big chunk of butter. served with frozen petits pois and sweetcorn (i used the cooking water to make the mash afterwards for extra flavour) that are doused in butter ![]() ![]() ![]() anyway. i have a load of the sauce left over. i'm nipping out to the shops for supplies once B wakes up, so if you can suggest anything to make to go with the rest of the sauce, shout up! (if i dont think of something, i'll probably freeze it and use it another time) i would do steak, but we had that last week! ![]() ![]() in related news, how much is ribeye steak at your local butchers? the farm shop down the road has gone up to £45 a kilo! i'm going to be concentrating on buying the cheapest cuts and seeing what i can do with them while it's that price! heres some beef birria i made last week too ready for some tacos... beef shin, £10 a kilo. 90 mins in the pressure cooker... ![]() ![]() ![]() ![]() ![]() Edited at 12:07 PM. |
