2 cake questions?

Hi just thought id ask experts on here, making a choc/ raspberry cake, which is best cream to get to fill and put on top of cake?

And also is it too late to do a christmas cake?

Hi

I don't claim to be an expert but hope this helps.

I usually use whipping cream with a little bit of icing sugar and some vanilla essence.

I was late making my Christmas cake this year made it last week, but will feed it well with brandy over the coming weeks. It should be fine but may not be quite as mature as usual.

If you have a look on line there are several recipes for last minute Xmas Cakes but I have never tried any of them.

Hope it all works out ok.

I use double cream, dash of milk and icing sugar to sweeten...
Christmas cake wise, not too late but get it made soon, soak fruit in rum (or whisky) for 2 days before making, then feed with rum twice a week, leave the almond paste till 48 hours before you plan on icing...

Will try to soak fruit tonight and do cake in a few days!
