Vegan and vegetarian recipe ideas

Hi all!

Going off my earlier thread, please share your favourite vegetarian or vegan recipes here! I'd love to try some new things for dinner.

Great idea! Here are some of my favourites:

- Vegan Chicken Nuggets

- Vegan Butter Cauliflower (also great with pressed tofu)

Not a recipe, but we had plant based Garlic Kiev from M&S tonight, it was gorgeous. No cruelty involved. Really lovely. xx

Haven’t tried those but love the M&S plant food range. Tesco’s also have some excellent stuff. My favourite recent discovery though is the meat free Richmond sausages

Ooh love this idea! My tea tonight was a roast, I had quorn sausages, roasties, swede and carrot mash, broccoli, runner beans and Yorkshire pudding. No recipe share needed, but its a good meal!

Any veg you like sliced up small, finely sliced onion, thinly sliced potatoes. Layer in a dish with cheese sauce and top with grated cheese and Worcester sauce. Bake in oven till veg cooked through ( pierce with a sharp knife to check). We have this both as a vegetarian meal and as a side dish with fish or meat. Good for those who cater for both vegetarians and omnivores in the same household.

My faves at the moment

Breakfast
Blueberry Pancakes with Greek Yogurt

75g wholemeal self raising flour
15g porridge oats
1 large egg
100ml full-fat milk
125g blueberries

Spoon sized batter in coconut oil, makes about 9 each.
Drizzle over honey or maple and serve with yogurt. Mmmmm.

Lunch
Creamy Mushroom Soup
1 tbsp olive oil
1 large onion
300g mushrooms
2 garlic cloves
1 stock cube
75ml full fat milk

Soften and brown garlic and onion for 5 mins, add mushrooms for 5 mins. Add stock (dissolved in 600ml hot water). Season with salt and pepper, bring to boil then simmer for 10 minutes. Blitz with a blender. Mmmmm

Worcestershire sauce contains anchovies.
