We had vegetarian shepherd's pie tonight. Could be made vegan with the right swaps though! Delicious.

I now make our lasagne with quorn mince and also the quorn pieces and chickpea curry , both freeze really well so make double each time , makes for easy dinner on nights you don’t fancy cooking

Have you tried Vivera mince? Its really lovely, I much prefer it to quorn. And they do a kebab "meat" too which is so good in pitta!

I’ve looked at the kebab meat a few times, think I’ll give it a go now !
I tried the kebab bread from M&S they are lovely with falafel so I’ll try them with the Vivera now.

I have found that meat substitutes dont cook well in the slow cooker which is a shame, they go mushy. But I made a lasagne sauce in it the other day and just mixed the vivera mince in before I made the lasagne and it turned out really lovely

Lunch today - Mediterranean Bean Soup

4 red onions
2 cloves garlic
tin of tomatoes
tin of butter beans
1 carrot
rosemary and thyme from the garden
1 litre of stock
tsp of paprika (I actually used some chorizo sausage but the flavour of the paprika is what you are looking for, obviously not vege version!)

Cook onions and garlic until soft
Add tomatoes and beans with herbs and stock.

Cook out for 20 mins or so, whiz with hand blender if you want it thick, or leave as it is for a rustic chunky quality.

I only use Quorn mince, would be grateful for the recipe please for Lasagne. xxx
