ADR day and it will only let me book 1 day. This system really is hit or miss, am I right in saying that to book over the phone I need to wait until 12?

I have read that the app is better than the website in this case but not experienced it yet myself!

search the app store or android play store for My Disney Experience.

You put in your ref no and boom - access to adr bookings at 180 days out, FP+ at 60 (onsite) or 30 days (off site) and lots of other goodies (maps, character locations, list of things to do, menus etc)
