Is that 11:00 or 12:00 UK time? If I do exactly that do you think I would be able to get the date I want? I've heard horror stories of it getting fully booked for dinner within the first hour of them going on the 180 days!

Yes that is uk time. Have you set up a my disney experience account on the wdw website? It's often better to use the website than the app for making ADR'S as the app can be glitchy.
Hard to say about how easy it will be to book. CRT is still very popular, so just keep trying! It's not unheard of for times to open up around 45 days out as that's when US guests have to pay for rooms / packages so if people need to cancel for any reason sometimes ADR'S open up.
