If I want to slow cook I use a proper slow cooker, so totally agree with you!
I've only used the pressure cooker a few times too as I just found that you don't get the depth of flavour that you do with a slow cook.

thats where pre-harvested bone marrow and/or gelatin powder comes in handy, especially if youre not cooking meat on the bone

try adding a pack of gelatin to a stew/etc, it makes a huge difference...

Well! I most definitely needed a new slow cooker!😂 I tried it out yesterday and I couldn’t believe how amazing it was! I came back from shopping and the house was smelling lovely from the sage I had used. This was the first time I had used it and I will definitely have to get used to it because it has a timer and a keep warm function and I think I over estimated the time because I was basing it on the old one (which is going to the tip btw). I made a baked risotto (well it has arborio rice in it!) and it probably could have been in for a bit less time, however, it looked and tasted great! I don’t think I’ll be using it for searing food because it doesn’t feel sturdy enough for my hob BUT I am over the moon and planning my next meal for it 😁👍
