Gem, I did the 7 night eastern in about 2001 (long time ago I know) and I remember having lots of fun! We didn't go to St Maarten or St Thomas as we were on excursions but my parents did and they loved it, especially the shopping. For me, the biggest appeal is the extra ship time. There's less stops I think on the eastern so perfect for that!
We had the choice between wester and 5 night for our honeymoon but I think we are going for the 5 night just to have more time in WDW
