Vegetarian stuffing

DD is a vegetarian and has asked for stuffing with her dinner, what are the best sausages to use ?

We never make stuffing with sausage meat. We use breadcrumbs, dried parsley and dried thyme, a pinch of salt, stork margarine. Stuff the bird with the resulting mixture.

I've never thought of adding sausage meat!
Just mix with boiling water and either place in a buttered dish or make into balls and bake

We make sage and onion stuffing. Boil onions until soft, put in food processor with breadcrumbs, sage, seasoning to taste and a little oil. Zuzz until smooth. Put in an ovenproof bowl and reheat in oven when required (if not using it to stuff the turkey with!)

I remember my Gran making this in the 70's and we still make it the same way.

I make an amazing apricot and pistachio nut stuffing, honestly Devine! It’s a must do for Christmas now and just as yummy cold
