I used to always do Epcot on day one, just because it's where I started 14 trips ago. Now, I tend to do whichever has morning EMH (it's AK on next trip), just because we'll be up at 5 with jetlag, and who wants to wait until 9 to get into a park? However, we always have dinner at California Grill after first park day, to coincide with the MK fireworks. Then it feels like the holiday's really started.

we always do a water park for our first full day. Our thinking is as the day before was long, just drifting around the lazy river all day and chilling out will restore our energy levels for the next day

This year we are going to IOA or Universal in the morning then MK for the evening. Have to start the 1st evening with wishes .

Same as the OP for us, it HAS to be Magic Kingdom.
It IS Disney, it's the icon. It starts the holiday.

We've lucky to have been five times now and each time were at MK first... (And last)

It was always MK but last time we stayed at the boardwalk so walked to Epcot and had a wander around the world showcase which was really relaxing, back to the boardwalk pool for the afternoon. Dinner on the boardwalk and then DHS for the evening

We have typically done seaworld on day one after a village inn breakfast but this year we are staying onsite and so we will head to Epcot after a cape may breakfast
