We're not cruise veterans but we've been on 4 - on Celebrity, Princess and DCL and all 14 nights (or 7 with DCL) on different Med itineraries.
2 adults:
*DCL - we enjoyed it and met some lovely people, which made the cruise for us - but probably wouldn't do another. We felt (and its only our opinion) - not enough variety for adults, adult areas were dead after kids bedtime. No casino. Few bar / lounges. Shows (obviously) all Disney based, and rightly so the cruise and ship are aimed at families. We found the food amazing in Palo but just ok in the main restaurants. The Magic was lovely but a bit small for us, we prefer large resort ships. We will do a 4 nighter from Florida at some point to try the Dream (we had one cancelled).
*Princess and Celebrity - we loved all our cruises on these lines, the ships are beautiful, large, entertainment is aimed at adults, casino, numerous bars, lounges, clubs and restaurants. Food is amazing everywhere on board. Less kids onboard, so pools etc are quieter.
*The service is equal on all 3 cruise lines - excellent! Little to choose between the 4 veranda staterooms, onboard pricing is similar and excursions are the same.
None of these 3 lines are cheap but DCL is more expensive for a product that's no better than other 4* lines.
We've booked our first Caribbean cruise for next March on Enchanted the new Princess ship - 10 nights - 6 ports and 3 days at sea. The ship is amazing!

We love celebrity. Ships are classy, food was good, service outstanding. Tends to be fewer kids onboard if that's a consideration. Previously done RCL and enjoyed those cruises too.

We’re approaching our 50th cruise across 7 cruise lines and don’t want to reiterate stuff already said but reckon that service, food, ship ‘quality’ and entertainment are very similar across Princess, Celebrity, Holland America with the demographic on HA being a little older.
These would be the lines to look at first imo - some cruise lines have a stronger presence in different parts of the world. There are some great transpacific cruises on Princess and HA but there are inevitably lots of sea days owing to distances involved but they take in Tahiti, Pago Pago, Bora Bora, Hawaii, etc. If you want fewer sea days then round trip sailings from Australia/NZ go to Fiji, Vanuatu and New Caledonia but don’t get as far as what I would say are the nicer Pacific islands.
For the Caribbean you are spoiled for choice sailing from Fort Lauderdale (Port Everglades) and Miami. 10 day+ itineraries will get to the southern Caribbean islands which are nicer imo - alternatively P&O sailing from Barbados/St Lucia as described above. I quite like P&O but enjoy a wider mix of nationalities that sailings from Florida offer.
Websites like ‘Vacations to go’ give a good overview of what’s available on almost all cruise lines around the world.

Thanks for all the comments, I have looked at a few “what cruise line” articles too and I think that Celebrity would be a good place to start. I also liked the look of Princess that somebody posted and that was the one I had chosen for the 2020 trip that never happened. So I will look at their itineraries too.

I was looking at a Celebrity South Pacific itinerary earlier and some times it said “docked” at a particular location and other days it said “tendered” at the location. Anyone know what the difference is? Can I not get off if it is only “tendered”?

Tendering is when the port is too small for the ship to dock and you are taken in by a smaller boat , it’s all very efficient and often quite fun.

Yes I agree!
It can be a lot of fun!
Some tenders are smooth and calm - and some are fast boats which the drivers make them bounce up and down over the waves to shore! Think a free speed boat ride!
(Nah, only kidding, they CAN go quite fast but it's never done in a way which makes it unsafe )

Sometimes at tender ports though, if the weather is bad it does mean you can't go ashore as getting passengers off the cruise ship onto the tender boats would be dangerous.

We’ve missed quite a few ports over the years due to bad weather but most have been tender ports owing to the reason you give. We tendered one time in Punta Arenas, Chile, it was lovely and calm going ashore and took 15 mins, but the wind picked up during the day and the run back to the ship was like riding the Deadwood Stage and took 45 mins. Even the crew turned green!
