I've stayed at AOA, Pop, and ASM. Pop is the nicest rooms, but the pool at AOA is better, ether way, if you have the budget then definitely go for it.
But there are lots of offsite hotels without resort fees or with lower fees that the Disney Springs hotels. We are staying this time (if we get to go) at The Red Lion which is half the price of the cheapest value resort even with it's resort fee and even with ubers every day would still save us money over the cost of onsite accommodation (as well as having the benefit of cheaper food options over the road)

We've just swapped from Buena Vista Palace at DS to the Dolphin ( lake view) for just £300 more with VHols (hotel only booking) and VHols are also giving a $50 food voucher for the hotel.

You're not really comparing "apples to apples" though? If the only caveat is resort fees, then there are plenty of cheap & cheerful options where even if there was a resort fee would still be way cheaper than onsite. Taking MrsBC's BVP(before she moved) these rooms are on par with some of Disney Deluxes & it's got a pretty decent pool with a lazy river but it's a much higher standard than a Disney Value IYKWIM. Some websites have the resort fees included so it's worth shopping around.
I'm not against onsite, we own DVC points, but also happy to stay offsite if need be. Even a DVC studio is just a room with 2 beds, a toaster, microwave & coffee maker, plenty of places offsite with the same IYKWIM. SD

I agree - we were very impressed with the facilities and options at BVP and some of the other DS resorts we looked at for approx the price (including the resort tax) of a value onsite , which to be fair we wouldn't choose to stay at.
Even the Gaylord Palms (rooms 410 sq ft) where we're staying for the first 4 nights is an absolutely amazing resort and is in between the price of an onsite value (260 sq ft) /moderate resort.
