I’ve cancelled so many hotels & DVC rooms, and rebooked so many flights now it’s crazy!

Without insurance in the USA, that's insane, not a chance. Could be financial ruin if something bad happens.

We would go on amber, provided we could get the day 5 test to release results within 24hrs as DH will have work.

I can quarantine the whole 10 days, we have insurance (contrary to belief many policies including mine still cover you even if FCO advises against travel), it's just the worry about test turn around times.

We could go on amber if we can bring our flight home forward a couple of days.

Dd starts secondary school 4 days after we get back so if we came gone early and test and release it would be doable.

Who is your insurance with?
Usually insurance to countries on the FCO warning list is only covered for essential travel and not holidays. Also often only cover Europe travel.
I personally wouldn't travel to the US while on amber unless I had clear written statement from my insurers that they will cover a holiday.

If the US gets put on the Amber list and Mr Biden lets us in, it will depend on the FCO whether I would go or not. If FCO advises against travel to USA then my Insurance wouldn't be valid, and it would be insane to be in the US without travel Insurance, especially as me & dd have underlying health issues.

Now if it's Amber & Mr Biden lets us in and FCO have removed the travel restriction then I will definitely go.. I'd have to take the 10 days quarantine as unpaid leave, unless I can use my NHS frontline employee excuse and get tested early and return to work (If it's even possible) seeing as I'm double jabbed and already had Covid.
