I would use normal caster sugar and stork or homepride softened cooking fat. I also only use Homepride SR flour. And I have never added milk. I'm trying to translate as I cook in pounds and ounces.

I think Stork makes a much nicer cake than butter and it's what Mary Berry uses so that's good enough for me! I also don't add milk either.

I do add a little warm water to the cocoa powder and mix it to a loose paste before adding it to the rest of the mixture. I think it makes the cake a darker more chocolatey colour for some reason, although that could just be my imagination

I always use Sally's bake blog choc cupcake recipe and put in round tins etc for a cake. I love it. Much nicer than any other I've tried. If you want something a bit sturdier or a lovely loaf cake, Jane's patisserie choc fudge loaf cake is also gorgeous.

You could always cheat and buy a Betty Crocker tempting chocolate or chocolate fudge cake mix. Both are delicious and all you add is the eggs, water and veg oil.

Silly question but do box cakes not have a funny taste?

I only use the Betty Crocker range and have never felt they have a funny taste. They usually turn out really well and rise nicely. They also have a lovely Rainbow sprinkle cake as well.

When my daughters make a cake they use the Charlottes Lively Kitchen Easy Chocolate Cake recipe, it also includes instructions for buttercream. They have made this several times as has my son and it has always been absolutely delicious!
