I suspect that they will replace unless they add additional amount you can pay for individually. Remember they are tailoring to the people who will spend the money and make them happy which means they will want to ride all the E Ticket rides.

As for the list I think that it all makes sense. They will be putting the rides that are always busy on the list so Space M and Safari's make sense as they are probably the consistently longest lines apart from the obvious SDMT and FOP.

I suppose if you can’t buy it until the day of they can change the line up on Genie+ with little notice.

I also assume they will just pick the big rides that have the big lines and for most parks it isn’t ever more than 2. It’s the ones we all have to rope drop/no FP at 30 days types

I hope this is the case and it makes sense but it wouldn’t surprise me in the least if we see the number of paid LL rides creeping up over the years.
