We are going next year and don't plan (as of yet) to do any parks. Going to Kennedy Space Center. Going to walk around Celebration. Hit the beach one day. Maybe even stay overnight, shopping and the rest relaxing at the pool/lazy river.

State parks, I love blue springs, the boat tour is brilliant and you can swim/float in the spring. Bravard county zoo is great. You can kayak at shingle creek, St Augustine is lovely but I would consider an over night trip as loads to see.

Revolution cable park at North Fort Myers is close to Cape Coral. You can try out wakeboarding, kneeboarding and waterskiing there for a really good price.

Naples Zoo
Lowdermilk park beach

Corkscrew swamp sanctuary
Plus shopping

Wild Florida is a good half day excursion and they have an offer at the moment for free entry (you still have to book day online) so minimal cost unless you book Airboat Ride or Meet the Sloth or similar. Also the drive is quite interesting seeing different areas of Florida.
