Mary Berry’s butternut squash lasagne is delicious.
Jamie’s vegetarian wellington is always a hit and we do it with either celeriac or butternut squash.
Any recipe for spinach and chickpea ciurry or halloumi and spinach curry is a hit. A lentil Dahl curry is easy and very tasty.
When we made the switch the key thing was building up our range of spices.
It has brought back my love of cooking as there is so much we can try.
We use quorn pieces quite a bit for stir fries or dishes that would usually require chicken. We also still eat fish and seafood which has made the switch easier

Oh, and lots and lots of home made soups from veg picked up at the market

This veggie chilli is so easy and delicious, we prefer it now to meat chilli. Obviously I just buy a bag of tortillas rather than make my own!
