I par boil in advance, day before, same with potatoes. Then on the day, i just roast. I don’t add anything like semolina. I have elderly MiL and also the young grand daughters, so have to keep it simple (bland)!
My favourite is chestnuts in with the stuffing and sprouts. To be honest, I’m not hungry after all the prep.
I bought a buffet server last week, it will help keep things hot, so I can relax with my timings a bit!

I play host for three days, then put my feet up with a serious bottle of something afterwards!

My tip is to prep as much as possible, the day or days before. Jamie oliver style gravy can be made and frozen in advance. Same with homemade soup!

I normally enjoy everything 😃 This year however I am on a bland liquid diet (with luck progressed to pureed food by Xmas) following an operation last week. Its a bit of a torture to have to cook it but I at least I get the smell 😃. And last year I had flu. But next year I will eat everything!
