We went horse riding at the Tri Circle D ranch (Fort Wilderness) last time. Really enjoyed it! Suitable for all abilities (although maybe a little slow for the more experienced riders).

You could spend a whole day at Fort Wilderness especially if you book a meal at Trails' End buffet or a dinner show like Mickey's Backyard BBQ. During the day there are pony rides, horse rides, and you can hire bikes or kayaks or go fishing. Out on Bay Lake there are pontoon boats or sea racers for hire, or you could simply take the MK launch to one of the deluxe MK resorts to have a QS lunch, as they are all fantastic compared to the park QS locations. (QS is so-so at Fort Wilderness unfortunately).

In the evening there is Chip n'Dale's campfire singalong followed by a movie weather permitting. All free, though you pay for the s'mores kits. Depending on the season, some of the RV owners go to great lengths to decorate their pitches, so it's always worth a tour of some of the loops. You could do this by hiring a golf cart for a day, which is expensive but great fun for tootling about.

Lastly the music for the MK fireworks is played on the beach at FW and the view of the fireworks is great, and if the weather is good it's a lovely way to end the day. You can fill your re-fillable mugs with hot chocolate at Trails End to sip while you watch.
