I got candy canes from Aldi when I was getting the dark and white chocolate (30p per 100g bar).
Asda and Sainsbury's by me also have candy canes, but a bit more expensive than Aldi. |

This sounds like a lovely recipe. I might try the mixing of dark and milk chocolate.
For mine I used all dark, melted it and then spread it on a baking sheet and popped it in the freezer for 10 mins. Then melted the white chocolate and added the peppermint. Spread that over the top of the dark add the crushed candy canes and then chill for an hour before breaking. I'd read mixed reports about whether freezing the melted chocolate was a good idea or not, but it worked find for me and obviously much speedier if you need the peppermint bark in a hurry.

Adding any liquid to melted chocolate can cause it to seize(go lumpy & hard) so you need to add very small amounts maybe one drop at at time. Another option is to add the essence while melting the chocolate rather than after but it’s quite hard to judge flavour that way

I thought I'd have a trail run go at making some for gifts using a snowflake mould I brought in aldi last week.
I think they turned out pretty good though next time I'll add some more crushed candycanes - I stirred them into the melted white chocolate which give a lovely smooth finish but was a bit hard to judge how much I needed to add |
