Carb counting at Food and Wine - diabetic

Have asked on the Planning forum but maybe more a general question.
Dd is diabetic and is asking re carb counting around the food and wine festival.
In previous years I think she has just guessed and injected/corrected but this year is really trying with carb counting.

So just wondering if anyone knows where to go for nutritional information at the Food and wine (and also I suppose do you get that info ANYWHERE eating at WDW)?
