You don't need to put your watch in water mode before you enter water, it will automatically protect itself. All water lock mode does is lock the screen to prevent you accidentally stopping/starting an app and then shakes the water out when you exit water.

Series 3 is waterproof 100% I used mine every day for waterparks, swimming, showers, saunas and not had a single problem. Although I no longer have it!

Chiming in here to add that I also have a Series 3, which has been with me to various water parks (going down slides, lazy river, wave pool) and it's still going strong.

I just believe it's good practice as you should always allow the watch to get rid of the water from the speaker, but that can be done after you get out and doesn't have to always be in waterproof mode, as you said.

Never had an issue with mine and I never took it off last August while in the pool or water parks.
I just used the water option to discharge any water after a swim/ride
