Until the last time we visited, we'd never been to the Disney waterparks. So we'd been 7 times and never felt like we'd missed out. And I wouldn't be too bothered if I didn't visit them again. That's not because they aren't any good - they are fantastic waterparks. It's just that I'm not into waterparks and can take 'em or leave 'em. They are very enjoyable but not a "must do" (IMO).
Personally, if I was you, I'd neither rule them out nor commit to definitely visiting them. Instead, see how you go. If you find that you're too busy at the other parks to fit them in and/or enjoy the convenience of the hotel pool then skip them for this trip. If you find you have time on your hands and/or fancy a change of scene, then give them a try and I'm sure you won't regret it. As a fair-skinned, turns-red-as-a-lobster-at-the-merest-hint-of-sunshine type of person, I find long-sleeved rash vests (swim t-shirts) are a good idea. I can't be doing with smothering my torso and arms in suncream every half hour!

Our favourite days are at the water parks, we always have 2 park days then a day off in the water parks, we have 4 kids and they love it, and we love lounging on the sunbeds.
We usually then book 3 evening fast passes for one of the main parks on our water park days and go in at night and watch the show have something to eat, and a few rides

One good tip re getting burnt. I have to be careful as I'm a sufferer of what's called 'Hell's Itch'. Google it. It's quite unpleasant to say the least. Anyway buy the 'No Ad' suncream. I have it on good authority from someone in the industry that there's no better suncream on the market. It has the same base ingredients as stuff that costs 30 quid a bottle.
You used to be able to get it in some Asda but I'm not sure you now can. You can get it off Amazon etc. Or wait until you get to Florida and stock up in Publix or Walmart. I've used many creams, including that very expensive so called all day greasey stuff you get in the white bottle with red and orange on. I got terribly burnt on that and suffered horrendous Hell's Itch' after a day at Wet n Wild. Just get the no frills No Ad, high SPF, slap it on every few hours and you'll have zero burn problems.

When we go to Orlando we alternate between going to Disney and not going - when we don't go I really miss the waterparks
