I drove both last September the most easy to live with internally is the Mustang but the Camero is a way better drive.
So if not going for something high end from Hertz then choose Alamo out of DCCC and at Desk ask for best Camero explaining treat etc and they might have a V8 or sometimes a Corvette there.

I had a look at the adrenaline range for Hertz and they were a bit out of my price range if I'm honest

We are staying onsite at Disney and the car hire for our duration is being collected from there.

I don't know whether to book and pay for a Dodge Callenger or similar now and then when we pick our normal car hire up on our first day, ask then. Or, don't book at all and just book it when we get there.

Would the Camero come under the "Sporty" Category?

The Camero is a standard convertible as is the Mustang.
I would book in UK for the date you require whichever category you choose.
