If your daughter is anything like my children this year she will be bursting to get into Disney on your first full day. She will also be awake as silly o’clock so it’s a perfect opportunity to make use of EMH in the morning. I would activate your tickets on the morning of your first full day and have a day or two at Universal or shopping and by the pool at the end. If I was going to Universal again I would definitely stay on site to get queue jump tickets as my kids found the queues there a bit of a shock after fast passes at Disney! If not I would agree with extending your stay. There’s so much to do you won’t want to waste time moving hotels unless there is a real benefit.

They seem to work for 15 days - 14 days after first use. I don't know if this is absolutely guaranteed though.

However why not just get 21 day tickets and then you won't have to think about it? The extra cost is negligible.
