Tips for adult only trip with DDP?

Morning everyone! It's my first time staying on site and I know the holiday is forever away but would like to start thinking about best ways to plan our Disney days. I want to be able to see as much as possible but also want to have some down time. We are at The DCS Tower for 7 nights then moving on to Universal for the next 7.

Can anyone share their itineraries or experiences of an adult only trip? We have all Disney, Univesal and Seaworld tickets. I will be 30 and other half 35.

DD and I are going Nov/Dec this year and then 401 sleeps til our next one hopefully with DS too.
All adults 33+.

I have assumed Disney Coronado Springs tower, ie Gran Destino

I was wondering if it was that, but never seen it expressed that way before. Was just trying to work out if onsite or not.

Thank you, your plan looks great and factored in lots of down time at the hotel too - will definitely take some tips from this
