When can I go for FPasses?

Hi,
I’m confused!
We fly to Orlando on 26th May for 2 weeks.
The first week we will mainly be in Universal as we stay at the Hard Rock from 28th to 30th May.
BUT we may still start our 14 day tix for Disney from 27th May.
Now we stay at a Disney Hotel from 1st June to 4th June.
So when can I start to book FPasses? Will it be 30 days out until the 1st June then 60 days out from this date?

Also, are these parks gonna be rammed over this time period?

The days you are actually at Disney, you can get fast passes at 60 days out. Other days, 30 days out for a total of 14 days altogether. Also, make sure you know when your tickets expire.

As mentioned above, you'll be able to book your onsite days (1st June to 4th June) at 60 days before your check in date. For your offsite days, you'll be able to book these 30 days beforehand, one day at a time.

End of May and beginning of June will be a bit busy because the Americans will be starting their summer holidays. You may also see some school groups in the parks as they have school trips to the parks (like we do at the end of term here in the UK). However, I wouldn't say it was going to be "rammed". It won't be as busy as Christmas, Easter or Thanksgiving, for example. It'll be busy but not stupidly busy.

ETA: It's Memorial Day on 25th May which is a bit like a Bank Holiday. So it'll be very busy from the 22nd to the 25th May. But the Memorial Day crowds should have reduced by the time you arrive on the 26th.
