I've switched my phone contract to 3 ready for our holiday next month, but I'm looking to sort something out for my son now.

I see they have an offer on with PAYG SIMs at the moment with double data, so pay £10 for a 2gb add-on and get 4gb. This would be fine apart from the use in 30 days limitation. He's going away on another holiday this Sunday, so if he starts his 30 days then, it will expire 5 days before we come back from Florida. Is it simply a matter of buying another top-up whilst we are there and converting it to an add-on to get the data going again?

Don't know how old your son is but you can get much better deals if you go for a 12 month sim only contract. They will put caps in place so he cant go over.
But in answer to your question yes that is all you need to do.
