Hi I have used Easy Jets assistance from Gatwick. After bag drop/check in I had to check in with the special assistance team located in the main terminal (you get a return time to the assistance team). One of the assistance team take you to your gate and take you through to the waiting area to board. Once the flight is ready to board you go on straight away with the families with babies. When I have requested assistance before when booking a flight, I have been assigned a seat at the front of the plane, either row 2 or 3. I normally find that at the other end of the flight (in Europe) I'm last off the flight while the crew wait with me for the assistance service there to arrive.
Hope this has helped a little, but please feel free to ask any other questions.
