we got given a heavy duty grill/panini press from the gf's work a few weeks ago, so have been experimenting...



first up, mexicana, goats cheese (the little white balls), black pudding, jalapeno, spinach and gouda on a seeded batch loaf...



(goats cheese, black pudding and spinach is my favourite pizza topping, so i had to try this, it worked really well!)




barbecue chicken, red onion, mature cheddar and gouda



bacon, mushroom and gouda (breakfast panini!)


this is our variation of a cuban... ham (cheap sliced), cheese (mature cheddar and gouda), prosciutto, sliced gherkin (cut into bits as a single slice just pulled straight out when you bit into it) and jalapenos, with firefoods fire horse mustard (or english on the original batch, but i ran out). mine also had pulled beef in, gf's has extra ham in.





bread-wise,fresh paninis from lidl are ok, even when really stale, if a little small. we *really* like ciabattas though - we got a pack of par-baked ones from booker cash and carry, need to get some more of those!

the next batch will be made using normal parbaked baguettes from the supermarket. will see how those turn out...
