Esta question
I know the middle names thing has been done to death, but I travelled in august this year without middle names. We are travelling again in july 2020. The question is, should I renew esta with middle name in january or not bother until they expire in May 2021.

No.
There is no requirement for existing ESTA holders to spend $14pp on a new ESTA just to enter a middle name

I have just done two of these for wife and daughter - what a nightmare - the stress
Why cant they have a " nothing has changed button " to auto complete the form when you have to renew it and a agree to something like a TandC button Rob |

Has to be your decision Excited, as Rob/others say the US are not yet enforcing. My brother travelled issue free on his Jan 2018 ESTA three times this year, but (yeah, I know, always a but...), by 'checking' the Disclaimer you acknowledged you'd read in full/complete as CBP require, including the official 2018 CBP 'names per pp' update.
Stab in the dark guess, CBP may have a long lead in before enforcing travel doc name match (if they even do of course), you've got a bit of time, perhaps hang on and monitor the red banner across the top of the official ESTA website for a change/addition to the 72 hour rule.
