Once parks are back to full capacity I can't really see the point of the park reservation system anymore.

One reason for Disney to keep it going is so that they'll know ahead of time roughly how many people will be at each of the parks on each day. They can then staff the parks accordingly.
Bob Chapek seemed to imply recently that park reservations were here to stay for the foreseeable future.
