Old car registrations? Plus the model - so you have a combination of upper case, lower case and numbers. If you need a special character, stick a star or ! On the end, so for example KX25ORAtesla!
It’s likely to fulfil most requirements and I use it where I can, as I’ve had a few cars so can rotate, so can also use husbands old cars etc.

I struggle at times to remember the registration of my current car, let alone the other cars I've had in the past.

Still, even if I could remember half a dozen car registrations, I'd then have to remember which ones I used for which website. And if my iPad told me that some of those passwords had appeared in a data leak (like the problem the OP has) then I'd have to come up with another set of passwords to use. Which means remembering another set of passwords.

I have over 20 passwords to 'remember' just at my place of work. And some of them have to be changed every couple of months. I end up having to write some of the less important ones down.

NI Number with a couple of alterations has served me well over the years.
I now have a list on a notepad in my desk that has a list of the passwords i use with an abbreviation so I know which site it is.
I also use 2 step authentication on anything that requires me to make a payment of any kind.

A colleague of mine used to incorporate her pet dog’s name in the password. The trouble was she’d owned so many dogs she could never remember which dog’s name was linked to which app or account!

These days I think a password app is absolutely essential for managing strong passwords. In fact, I can't see any other way. I use LastPass.
To me this is a tiny price to pay doe security and given the consequences to breaches.

Just sent a birthday card to a friend, it had a picture of a man at his computer, and underneath it said

Your password must contain a lowercase letter, an uppercase letter, an Egyptian hieroglyph, the blood of a virgin, a unicorns horn and the claw of a mighty dragon.
