Just got back!
We enjoyed:
Earth Eats/ Food, stall at Epcot Food & Wine
Yak & Yeti (could swap most of the chicken options for tofu)
Snow White dining at Wilderness Lodge - especially the Trickin' Chicken
Impossible burgers at Sci Fi Theatre, Beaches & Cream, Yak & Yeti
Casey's Corner
Chilli and tots at Beaches & Cream
Jungle Skipper Navigation
Tusker House Impossible Curry

Wanted to try the options at Galaxy's Edge but other than the bites at Oga's we ran out of time.

we have been going for 25 years and at the start it was cheese pizza or a garden burger, that was it

every year it seems to improve

We are the same. Being going for years with 2 veggie daughters and at the start for us it was, cheese pizza or mac and cheese but it has improved option wise with each visit.
