We have never gone in May

Is there any “themes” going on then in the parks like they do Christmas/Halloween?

theres flower and garden festival (like food and wine) in Epcot at that time of year

We always go in May. You basically have Flower & Garden Festival along with US Mother's Day and the end of the Easter celebrations (there tends to be a few random things that last through). Its a great time to visit as its not too busy and the weather's good. As you can see from countdown we are going on 5th May this year as a family of 5 adults!
