Sounds interesting I've never heard of cowboy hotpot. Where do you buy the Cowboys? Or should I really be asking what actually is it?

Its basically beans and sausages!

I dice one onion and a couple of garlic cloves then this is sautéed in a little olive oil.
Slice 8 sausages (more if there is a larger family) I have been using chicken sausages. I slice them to bite sized pieces and add to the onion and lightly brown.

I then add two tins of baked beans (any brand) and fill a bean tin with water and add to the beans and sausage.

A splash of Hendersons relish or Worcester sauce, salt pepper and a stock cube. Give it a good stir and leave to cook for around an hour.

Serve with mashed potatoes and gravy if desired.

To make it a real cowboy hotpot you should add tomatoes, liver and bacon but we don't like it so I just adjusted for our tastes.

May I add no cowboys were injured during the making of this recipe!

Thank you sounds tasty. I like liver but the rest of the family don't so I wouldn't be able to add it either.

Left over night - one of us will have pork stroganoff with rice while the other will be garlic chill chicken noodles! Nothing going to waste at the moment
