You’ll struggle to get baked potato in the way you would here but most QS places will do a salad of some sort.

Take a look at the menus. I eat neither hot dogs or hamburgers and very occasionally pizza. I always find plenty of quick serve at WDW. 90% of quick serve will have at least one salad. Columbia House has several healthy options. And IIRC, there is at least one quick service establishment that specializes in baked potatoes (what you call jacket potatoes) in MK.

There are SO many options if you don't want fried/beige food. Hopefully it will help you OP.
