3 day Disney tickets, what to do on 1st day (memorial day)

Hi
So I am after some advice on what to do on our first full day (Memorial day Monday!)
We are offsite and only have 3 day base disney passes to use in a 5 day period.
AK has EMH on the Monday and MK is down as a red day.As we will be dealing with time difference, we wouldn’t stay at parks all day, but would like to get the most out of it as we won’t be able to return another day.

The parks we want to do are AK,HS and MK, but was thinking to do HS towards end of week as the kids have never seen Fantasmic and will hopefully be adjusted to the time difference by then.

If we didn’t do a park on that day what could we do instead?We have my parents and mother in law in tow, who are trying to keep costs down

Do we just chance it and get to MK for rope drop and face that we probably won’t get to ride everything we want to?

I am just looking at the crowd calendar today and it’s supposedly a green day at mk, but wait times are looking very long!
