Varies a lot depending on what vegetables and herbs I have in the house, but I put some milk in with the mince while it is cooking, the mince soaks it up and is tenderer, and I use the fresh pasta sheets in preference to dry ones. I use Dolmio cheesy white sauce.

I always make my own sauce.

I literally melt butter or marg if that's all I have in a pan, and add enough flour so that its a sold lump that you can get start to brown and 'honeycomb'
I then add milk, tiny bit by tiny bit. keepi9ng stirring til you have a medium thickness liquid, then turn up the heat and let it boil.

If you are struggling with lumps, then switch to a whisk as soon as it becomes liquid enough, and non stick pans are your friend

I always put a layer of lasagna sheets on the bottom, mince mixture, grated cheese, another layer of pasta, mince, cheese and a final layer of lasagna and cover with a jar of white sauce, loads of mozzarella and sliced tomatoes. 😋😋

Grandmas secret recipe, add a couple of teaspoons of plain cottage cheese on top of each layer of mince.

I like to have beef and white sauce in all layers. The white sauce (bechamel) is not too difficult to make. There are two main styles. The way I was taught at catering collage, cook off flour and butter and slowly add the milk, mix together between each addition of milk. and Deliah's style which is put all the ingredients in a pan and keep whisking it till it comes right. Add the cheese and you can add an egg yolk for colour.
