The only issue would be heating it more than twice is dangerous. So if you were planning on eating it all Christmas Day then it’s not an issue. If you wanted it to last a few days then I would do it all on Christmas Eve, it also gives longer for the flavour to marinate

Oh dear, my plan was to reheat also. What are the dangers?

I always reheat and I've never been poorly. as long as you reheat 100% and not just warm it through

Its quicker to finish off from hot - just glaze and roast until golden. If you roast from cold it would take a lot longer to heat through fully and you risk drying it out

are you wanting it hot for dinner xmas day? If so I would get a slow cooker and put it on overnight then finish it off in the oven when your ready.

It is possible to use the water you've boiled it in for soup but it can be very fatty/salty depending on the joint you have so do a taste test.

I cook my gammon in slow cooker with some water, pickled onion juice from jar and sprinkle some brown sugar over gammon really tasty and moist, used to cook in oven inside foil but find much better in slow cook .

I always cook my gammon in Coca Cola, finish off in oven with treacle and mustard glaze.
