We like staying on Palm Parkway LBV - near to Disney Springs and plenty of places to eat, but not too busy. We always stay at the Extended Stay, although it may not be to everyone's taste.
Easy drive to Disney and Universal parks, avoiding I4 (although OP says they won't be driving). They have a shuttle twice a day (I think) but only goes to Epcot and TTC, and Universal.

Fair point. It does take longer but with some planning it can be ok.
If going to Magic Kingdom you get the bus from Disney Springs to Contemporary and walk from there. Or to Polynesian / Grand Floridian and get the monorail. For Epcot or Hollywood Studios get the bus to Boardwalk or Beach Club and either walk or take the boat to either park (the boat is great) Animal Kingdom I would get the bus to Animal Kingdom Lodge or Coronado Springs and get the bus from there as you are heading in the right direction. You can get a bus to Typhoon Lagoon from Disney Springs - last time we were at Disney even on site guests had to do this. Blizzard Beach you go to Animal Kingdom first. Or you can get the bus to Disney Springs, walk to Saratoga Springs (not far) and get a bus from there to any of the theme parks. It is tricky getting to all the Disney Parks without a car from a hotel that is not onsite. Personally if not driving i would recommend staying onsite but it is expensive even at the 'value' resorts.
