Do the Food & Wine booths vary year by year?

As above really. Do the booths and what they serve roughly stay the same every year or is it brand new year on year?

Menus do get slightly tweaked or things added from time to time, but generally it's the same most years.

My favourite pork slider from Hawaii has been there as long as i've been going - a good 5/6 years. The Fillet from Canada is the same too.

I think the booths generally stay the same but there are some items and booths that get removed or added or changed. There are a few places online that keep very close track of what gets changed each year, e.g. easyWDW did a whole series of blogs on all the Flower and Garden food booths this year reviewing the items and saying what was changed from last year's booths!

Thanks all, I'm now researching all the food choices like mad. I never thought we would be there in time for it as we have to go in August so it's a nice surprise that they've brought the start date forward

I'm really excited that they've brought the start date forward as for too many years we've watched it being got ready and then gone home before it started!

Yes, usually it gets tweaked a bit but mostly the same. Check out the Disney Food Blog who will list every menu and give you tips of favourite things to try.

We had a wonderful day eating round the world. Had a light breakfast, then started at 12.00 sharing one item from every booth. Finished at 9.00 with Illuminations. Didn't need any other food that day!

Don't forget it's a great use of snack credits too. Most main items are more than $5 and are a snack credit. For drinks and sides, either buy a wristlet with a gift card attached which you can tap to pay, or just charge them to your room with your magic band if you are onsite.
