Buffets - "Plats" - How Does It Work?

I have read about Buffet Restaurants now doing all you can eat "Plats", how does it work?

Not done it but I think you ask for which one you want and they bring it, and then you ask again - so ‘family style’ essentially.

Also interested in this , we have Hotel Cheyenne breakfast on our booking and a bit worried that the service is quite slow like other table service restaurants ? Especially if it's busy?

I'd completely forgotten they weren't buffet style , I really enjoyed us being on our own time etc

We went over the summer and had the buffet at Marvel hotel. You got given a menu with all the choices on - pre prepared plates - and just asked for what you wanted. Once you've finished that (or had enough) - you can ask for something else. No limit to number of starters / mains / desserts.
Breakfast was similar - cereal / cooked choice etc.
Only thing I didn't like was that it was some choice was limited - e.g. if I wanted a steak - it would come with the steak, veg and potatoes - but it may only be the steak I wanted. But I suppose they have to make it as straightforward as possible - just means there is more waste.

Service was generally ok - except at breakfast which we found quite slow.
